Selamat Hari Malaysia - Pandan Cupcakes Gula Melaka





Assalamualaikum and Hello :-)

Baking can be stress relieved sometimes but depends on the level of the baking difficulty.  I would go for something easy if I feel that I need some therapy other than stitching.  I have been wanting to bake this cupcake since I saw rima's pandan cupcake gula melaka. It looks pretty and the combo it self makes mr drooling *hiks*.  I had googled for the recipe and stumbled upon this blog : Pandan Cupcake Gula Melaka. Big Thanks  to Faeez for a wonderful recipe.


Since I want to make an express cupcakes, I used a AB Mauri sponge cupcake premix with vanila flavour,  The premix directions required to beat the sponge mix with egg, milk and melted butter, I add 2 tea spoon of pandan paste, 1/2 teaspoon of green colouring and substitute the milk with ms instant santan.  1/2 of the premix (250g) yield about 14 cupcakes. Then..Bake!




The swiss meringue buttercream recipe is quite easy actually and it does not melt when I leave the cupcake at room temperature for many hours.  Will definitely use this recipe in future.  Bon Appetite!

Bahulu Perancis ala Edd Kimber



Assalamualaikum and Hello everyone.

Hiksss..memandai jer kan melayukan nama Lemon Madelaines nie. Buku Edd Kimber me beli since last year lagi.  Masa tu me tak berapa sihat, so selak2 buku pun takde feel langsung nak membaking. Lagi pun cari acuan sepapan bentuk madelaines nie tak jumpa kat kedai bakery around klang valley nie. Kalau online memang melambak2 and me malas nak beli kat ebay online since most seller imposed additional charge..mcm tax but not gst tau..hihihi



Masa gi survey2 harga barang baking kat Bagus Melawati me jumpa sebiji-sebiji acuan madelaines. So kenalah beratur dalam dulang. Nak guna kena letak banyak butter supaya tak melekat tapi outcome dia okey walaupun tak berapa nampak line2 tu. Rasa madelaines tu me suka bahulu lagi lah. Mana boleh lawan kuih traditional kita kan.  #bahulucicahairkopi# sedapkan.

Good Food Great Series




Bismillah.

Assalamualaikum and Hello !

Alhamdulillah wa syukru lillah.  Alamak me sudah terhooked to this baking series every sunday 10 pm at litvchannel.  muahahaha..kata orang ehh kata survey kalau tengok rancangan masak boleh menyebabkan obese..huwaaa tidakkkk..dah la me malas dah nak berdiet-diet di usia midi nie..hanya sekadar makan heavy breakfast, me memang tak ambik lunch and dinner at 7.00 pm. Penting ! gula kena kurangkan..tapi naik jugak nieh hahaha..ok sesekali me jalan-jalan kat public park and kalau terbukak channel yang ada rancangan execise menari salsa me pun ikut sekali biarpun dengan baju kaftan..hahaha takde sape nampak ehh..

Anyway me memang suka tengok TGBBO nie sebab ithe environment more santai and tak de pressure sangat macam masterchef  Judge dia pun sopan-sopan as said by DH who happened to watch this series with me. Contestant adalah home baker yang rata-rata adalah amatur and they will be tested their baking skills in making a pastry, biscuits, cakes, pudings and bread.  In this series, me pickups a lot of tips too especially when dealing with pastry.  Dekat UK sekarang dah siri 4, dekat malaysia series 1 dah tamat and this coming sunday masuk series 2.



Ohhh inilah dia yang dibimbangkan..muahahaha.DD balik dari kelas, bawak sepeket besar blackberry rasanya masam dan berbiji sikit mbe dekat negara 4 musim rasa dia manis, me buatkan fruit tart dengan sweet tart base.  Leceh dough tart yang ada gula sebab dia lembik sikit tak macam dough yang kita buat untuk savoury pie yang keras sikit me guna filling whipped cream dengan cream cheese. Resipi me tanya dari Chef joy of baking.  Just type blackberry sweet tart. 


Haa kan ..outcome dari survey tu dah dekat-dekat nak betul dah..hihihi Paris Brest bukanlah terjadi sebab tengok TGBBO tapi my bro lah dah menayang kat FB dia kan..pastu dia share la recipe kan..kita pun ter..ter..buat jugaklah kan..muahahaha..Paris Brest nie guna choux pastry juga cumanya kita paipkan bentuk gelang and filing tu kena guna filing yang firm macam buttercream.  Kalau guna filing custard biasa confirm la tak nampak kan sebab dia kan agak cair.  To me, untuk kelainan filling memang sedap tapi kalau nak nampak cantik memang kena letak filing banyak and me tak berapa suka cream yang banyak. 



Sebabkan me tengah mood malas nak merenyahkan diri filing tu me letak whipped cream dengan blackberry compote and satu lagi tu whipped cream yang campur dengan praline..siap.  Untuk rujukan resipi boleh semak dekat joy of baking or boleh juga ke sini : humble pie

Me akhiri entry nie dengan perkongsian zikir selepas solat Suhuh dan Maghrib. Mudah-mudahan kita mendapat keberkatan dan manafaat beramal dengannya

Bread Layered with meat and cheese, bird and flowers in the garden

Lately, I have been quite from blogging, not so much posting but I do have intention to do so, I do take a lot of pictures to share but when it comes to updating with pictures and writings, then arghhh..urghhh..(wink).  I baked this wonderful recipe twice already, everybody at home loves it. Roti Lapis Daging Berkeju

Bahan2:
utk Inti:
300gm daging cincang @ 4 kpg daging burger (dihancurkan) kalau nak daging lebih blh tmbh lg..
2 ulas bwg putih
1 biji bwg besar
1/2 paket perencah daging black paper maggi
sedikit air
garam n gula
minyak

12kpg roti
3biji telur
200ml susu fresh
8kpg slice cheese
cheddar diparut
* sayur2 ikut suka

Cara2:
utk inti
Panskan minyak, tumis bwg putih, bwg besar,daging dan gorengg hingga daging empuk.
kemudian masukkan perencah black paper dgn sedikit air dan masak sehingga daging empuk dan kering.
ketepikan n biar sejuk.

Untuk Roti lapis
Sapukan keseluruhan bekas tahan panas dgn mentega
bancuhkan telur dgn susu sehingga sebati. Celup roti kedalam bancuhan susu tadi dan susun dlm bekas. Buat sehingga penuh bekas utk lapisan yg pertama.tuang kan separuh dr inti tadi keatas roti n ratakan. kemudian susun slice cheese keatas daging.Tutup dgn lapisan roti yg dicelup seperti langkah pertama tadi
Ulang proses yg sama. Lastly tabur cheddar parut kat lapisan atas sekali..
jika ada lebihan telur, siram diatas roti supaya tidak membazir...
bakar dalam oven yg telah dipanaskan pada sushu 180c lebih kurang 35-40 mnt( sehingga masak)
keluarkan dari oven sedia utk dihidang..


 
I did not go for holidays during long weekend last week.  I have a lot of house chores that need my attention, my garden has been neglected for months, since I was busy with my baking.  Mine's and DD's closet and our store  needs to do some spring cleaning.  I have a headache as all my girls loves to collect shawls, they bought many kind of shawls from ONLINE mainly *sigh* but end up wearing only few ones..so me pun mode pot pet pot pet...I urged them to donate it to the charity, so that it can benefit others rather than keep it nicely in the box without any definite intention to wear it


Japanese rose is currently the only flower that survive in small garden.
 

Petunias are quite expensive at Sungai Buloh Nursery last week maybe because of the weather and limited choice.  The price is usually bit higher if it is during weekends and this is my best pick


Another flower that I bought but I forgot to ask for the name, and I dont know how long it will last but I love the colors.  I don't buy many as it is just short trip even though I do have in mind to look for other few flowers but time does not permit.


I went to Artisan to shopped for the chocolate split, and I noticed that there are so many boxes arrived at the KK home Deco which is few shops away from the artisan's, I suddenly become curious and "busy body" to take a peek on the new arrival hahaha..and then exit the shop with this "cute" birdcage.

Tuna Cannelloni


Bismillah.

Assalamualaikum and hello readers :-)

Tuna cannelloni is my youngest DD favourites and it is easy to do, cuma masalahnya nak mendapatkan cannelloni nie, yang so far me jumpa kat tesco jer.  To my fb's friend, so sorry sebab lama pengap resepi nie..hiks..ok here it is :

Serves 4 to 6

50g Butter
50g all purpose flour
approximately 900ml hot milk
400g tuna, drained (me guna sardin cap ayam)
115g Fontina Cheese (me guna cheddar cheese)
pinch of grated nutmeg
12 pre-cook canneloni tubes (bergantung pada saiz baking dish kita)
50g parmesan cheese - grated
salt, ground pepper, fresh herbs to garnish



Method : 

Pre-heat the oven 180 c

White Sauce

1. Melt the butter in a heavy pan, add the flour and stir over a low heat for 1-2 minutes and remove the pan from heat and gradually add 350ml of the milk, beating vigorously after each addition.  Return the pan to the heat and whisk for 1-2 minutes until the sauce is very thick and smooth.  Remove from heat

2.  Add 120ml of the white sauce with the tuna, salt and black pepper to taste, me tambah beberapa batang cilipadi..hiks.  Set aside


3. Gradually whisk the remaining milk into the rest of the white sauce, then retun the pan to the heat and simmer the sauce, whisking constantly, until the sauce is smooth.  Add the cheddar cheese, nutmeg, salt and pepper to taste.  Simmer for few more minutes, stirring frequently.  Pour about one-third of the sauce into a baking dish and spread to the corners.

4.  Fill the cannelloni tubes with tuna mixture, pushing it in with the handle of a teaspoon.  Place the cannelloni in a single layer in the dish.  Thin the remaining sauce with a little more milk if necessary, then pour it over the cannelloni.  Sprinkle with parmesan cheese and bake for 30 minutes or until golden.  Serve hot, garnished with herbs.

Tambah Nilai




Salaam and Hello readers,

Bulan March sudah hampir ke penghujungnya.  Banyak peristiwa suka duka yang ditempuhi sepanjang perjalanan di awal 2013.  Awal bulan Februari kami dikejutkan dengan pemergian saudara  terdekat di usia belasan tahun dan di pertengahannya pula, sahabat lama meninggalkan kami semua dan akhir Februari keluarga besar DH, menerima ahli baru, Barakallhu Feekum Mohd asyraf & Sakinah semoga perkahwinan berkekalan hingga ke syurga firdaus.

Awal March, 2 orang lagi sahabat kami pergi menuju perjalanan yang abadi di usia kami dan semalam jiran yang kami kenali hampir 18 tahun menemui penciptanya setelah hampir 3 bulan berjuang melawan kanser tulang pada tahap 4.  Subhanallah, mati itu adalah pasti.  Ulama tidak takut akan mati, yang ditakuti itu adalah cara kematian itu.  Sama-sama kita berdoa untuk kematian yang husnul khotimah.

Pejam celik, minggu depan cuti sekolah penggal pertama pun bermula, and that's mean me akan busy juga dengan wedding sorang lagi my nephew, since hari nikah, hari langsung dan hari reception adalah berlainan, sure lah bertambah2 bizinya. Semoga Allah permudahkan semua urusan, robbi yassir wala tu asir, robbi tammim bi'khoir.


Ok, now story about kelas bersama Chef Amer (Chef Chocolate) - Inspirasi Kek Coklat Premium.  Kelas-kelas Chef Amer memang cepat fully booked so me dah booked kelas nie 2 months in advance *wink* at The Desert Table, Mutiara Damansara. Ada 4 resepi kek coklat and this is a demo baking class and cake decoration will be done by the student.   Due to that, me personally feels friends yang nak attend, kena at least ada basic baking experience.


Owh part ni me memang lemah sikit.  Kalau kasi markah A,B,C, D - me rating myself C.  Chef Amer memang best and the class in fun and santai.  He shared a lot of tips and tricks esp about chocolate :-). 


Taraaa..kelas bermula tepat jam 9:30 and end about 6:00 pm.  Kek yang atas tu Hazelnut praline torte (torte yang maknanya dalam bahasa German adalah kek, kalau french, kek tu dipanggil gateau).  Sebelah kanan tu Classic French Opera Cake, depan adalah Chocolate Volcano Cake, and sebelah kiri atas Daim Croqant Cake.  Abaikan ajer lah tangan2 iteww sebab memang masa tu dah penat..hiks..datang kelas kek demo jer pun penat..dulu masa me kat Icca Wilton pagi sampai petang boleh bake 2 kek gitu..sign of aging *sigh*



Now after Cake Class, menambah nilai dalam hidup, memperbaiki solat supaya lebih baik, tidaklah berada ditahap yang sama ketika kita mula belajar solat, seperti kata al-fadil ustaz Ahmad dusuki, kerja pun naik pangkat, kehidupan pun upgrade kepada yang lebih baik, takde excuse untuk kita tidak memperbaiki solat supaya menjadi lebih baik dan sempurna.  Memang sangat2 bermanafaat kelas penghayatan solat yang dianjurkan oleh k-fiqh ini.  Ada 4 asatizah yang membentangkan kertas kerja masing2, ustaz nizam, Dr Zaharuddin, TG Dr Basit Abdul Rahman dean Ustaz Izhar.  Jazakumullahu ustaz.


Selepas 14 bulan bertalaki secara bersanad bersama TG Dr Basit Abd Rahman di Masjid Negara, akhirnya tamat juga pengajian kitab Munyatol Musolli nie.  Kitab turath bab pengajian tentang solat ini di karang oleh Sheikh Daud Al-Fathoni sudah berusia hampir 192 tahun ! dan masih lagi digunakan dikebanyakkan pondok-pondok pengajian di negara ini.  Alhamdulillah semoga Allah memberikan ilmu dan kefahaman serta kekuatan untuk beramal dengannya.

Holiday Baking

It was a long holiday and we decided not to travel outstation as I knew that the traffic is going to be very bad as most people are taking this long holiday opportunity to go for holiday or balik kampung for CNY Celebration.  In my housing area, the traffic congestion had started since Wednesday last week till Friday.  On Friday, the traffic condition is the worst as my journey to office usually take about 10 minutes become 1 hour with bumper to bumper jammed! *sigh*.

Since we have 2 wedding invitation over the weekend and DH is having a meeting also over the weekend, we decided to stay at home doing what we love to do like watching movie, sewing, baking and do some house keeping *wink*.  After Durian Crepe fenomena, now melty hershey become popular among the cooking blogger and facebook, I decided to make one and thanks to Azlita Aziz for sharing the recipe and its worth trying *yum*




This is my second time baking this yummylicious recipe shared by muna mashed potato with minced lamb pie.  I am preparing this for my breakfast and everybody at home loves this pie especially DH who is a fan of Lamb *smile*.  Thanks Muna!



Masak dari Hati Masak Dengan Iman - Nasi Bukhari a homemade recipe shared by Chef Ammar Ali during his cooking show at TV Alhijrah.  The cooking process is much easier than preparing a Mandhi Rice.  This is a must try recipe.  You can find the recipe from his facebook.


I learned to make a French Loaf from my brother in law who is a Chef de Pattisserie.  Usually, bila my BIL balik cuti, we will request a cooking class for a family and if he is not busy he will fulfill our request.  Lenguh tangan nak menguli roti nie with few methods of kneading...lebih kurang 4 jam dari proses menguli sampai membakar. Rasanya beli kat kedai lah lagi senang..*wink* ayooo if bil tau..sure dia tak nak ajar buat roti lagi..hahaha...but it is an good experience for us *smile*.

Tiramisu - Lift Me Up



Salaam and Hello readers :-)

I have ignoring the concern about weight watch for quite sometimes and I do gain few kilos after the month of Ramadhan and have not started any exercise plan..and that is a confession 'Opps'.  Okay, the new year resolution is to shed few kilos..muahahaha..dieting need a commitment and it cannot be on and off, taking pills or weight loss supplement is just for a short term and after losing many kilos, we still need to have proper diet plan to maintain the ideal weight.  After 21 years of marriage with 3 children and the eldest is now a young lady,  I had gain about 10kg..and memang dah lalui lah macam-macam cara nak diet or maintained the weight, so now rasa macam tak kisah jer lah nak makan apa but caution :-) less sugar intake, less fat intake, more fruits and vegetable intake, drink a lot of water and housework pun part of exercise.  


Bila me jumpa Mascarpone cheese priced at rm7.90 for 250g, alamak..murah la pulak...usually it was priced between rm25-27 per pack of 250g lebih kurang.  Terus teringat Tiramisu then, terus tak rasa yang Tiramisu boleh menolak jarum penimbang untuk bergerak ke kanan dan kanan lagi..hiks..and Thanks rima of bisousatoi for this sinfully delicious tiramisu *xoxo*.


Since Icca-wilton is having their year end sales, I better be there to grab the bakeware and Better Baking Tools in my wish list.  The heart pan is discounted at 30% and Cup measurement is less 10%.  Then proceed to Pantry Magic at Bangsar *wink*


Pantry magic is also having a sales with 30-40% less for selected items..aiyoo kenapalah hujung tahun2 nie semua pun pakat2 nak buat sales..pening nak bajet :-)..ngeeee..unfortunately the item that I was looking for is not available and I have to wait for next month shipment, I managed to have a short chat with the owner's mother, she is a lovely lady from Perlis and I am so proud to learn that the shop is owned by bumiputera and I pray for their success.  I don't leave pantry magic empty hand as I was delighted to find the Ulster Weaver Linen Tea Towel is sold at Rm24.80 per piece..memang murah sebab linen biasanya mahal :-)..ada banyak lagi so dont miss it :-) and the sale is untill 31st Dec 2012.

DD, lets go for morning walk tommorow :-)..

scones with jam and cream


Salaams and hello readers *smile*

My scone is posing without her partner,  fruit jam and cream as everyone at the dining table cannot wait to enjoy this hot scone, fresh from oven *wink*. This recipe make about 20 scones using a cookie cutter about 1 inch heights and 2 inches diameter.  So, lets go through the recipe.  It took me 40 minutes to prepare this scone :-)

Ingredient 

450g self raising flour or 450g all purpose flour + 2tsp baking powder (me use self raising floor)
large pinch of salt
50g butter, chilled and diced
1 tbsp lemon juice
about 400ml milk, plus extra to glaze
fuit jam, to serve
clotted cream or whipped heavy cream to serve

method

1. preheat oven 230c (me used 200c)
2. sift the flour and baking powder if use all purpose flour and salt into mixing bowl.
3. add butter and rub with fingertips until fine and evenly textured
4. whisk the lemon juice into milk and leave for about 1 minutes and pour into the flour mixture and mix quickly to form a soft but pliable dough (me tuang sikit2 until dough tu masih melekat2 dekat jari tapi masih boleh bentuk dough bulat, so memang tak guna semua 400ml - dalam 250-300ml je guna). THE WETTER THE MIXTURE, the lighter the resulting scone will be BUT IF THEY ARE TOO WET, they will spread during baking and lose their shape
5. knead the dough to form a ball, then rolled it out on on floured surface to thickness at least 1 inch.
6. Using a cookie cutter and dipping into a flour each time stamps out the scones. place them of a floured baking sheet (me tak guna baking sheet, just tabur tepung atas dulang pembakar). Re-roll any trimmings and cut out more scones
7. Brush the top of the scones lightly with a little milk and bake in the pre-heat oven for 20 minutes or until risen and golden brown.
8. Wrapped the scone in a clean dish towel to keep them warm and soft until ready to serve.

Our Mille Crepe Cake *wink*


Salaams and hello readers *smile*

I hope everyone had a wonderful weekend and me too :-) enjoying and exploring the journey of making a Mille Crepe Cake with DH and DD.  DD prepared the crepe batter and DH is helping me to prepare the crepe and assemble the cake :-)....took us almost 3  hours to produce one cake *sigh*.  I had to make an extra batter due to few of the crepe cannot be use, some of them torn or difficult to remove from the non stitck pan (I wonder why..maybe I should refrigerate it longer than 30 minutes)..patience is needed for this labour intensive cake and after few trial and error..finally we make --  just OK crepe *wink*.  

We came to know about this mille crepe cake from Food Foundry at section 17, Petaling Jaya.  You may click to these link to know more about this shop from these blogs Angmegan and 10 more bites.  I told DH that I want to try to make one,  but he warned me that it is not easy to make a crepe, hurmm.. so I delayed my plan and decided to find as much as possible information about this cake until I have confidence to make one.


When I saw Azlita's entry about the cake, it makes me drooling and the picture tells me that I should try it..hiks.  Thanks to Azlita Aziz (May Allah blessed you for the knowledge shared).

We managed to make about 20 layers of crepe with vanilla cream custard filling and the verdict is - we love it !! The moment you finished the first slice, definitely you wants to have one more slice..the vanilla cream custard filling is just awesome and it is really worth our efforts *Smile*.

My Lemon Chiffon Cake, Hot Lemon tea and Datuk

I always follow Datuk Abd. Jalil Ali column in a few magazine published by Karangkraft.  His writings is about his own experience and people surround him.  Being a journalist open a door for him to meet and mix with people from all walk of life.  Me suka belajar daripada pengalaman hidup orang lain..no..no..no bizi body..but pengalaman hidup yang boleh dijadikan sebagai pelajaran dan panduan hidup kita dimana kita sendiri tidak melalui pengalaman itu.  Datuk Jalil ada 5 buku tapi me bought three as my coffee table book.  Tapi jangan lupa, buku ker, kisah drama ker, wayang ker, al-quran itu wajib kita baca sebagai manual hidup kita.  Bak kata ustaz Syed Norhisyam, yang kita tengok kat tv tu tak semuanya perkara benar..Al-quran itu semuanya perkara benar..jadi pilihlah yang benar *smile*


Mamatiamia chiffon cake looks so tempting make me wants to bake one :-).  I have not tried any chiffon cake since my last class at  Wilton with the excuse -- I don't have the proper pan *hehehe*.  So yesterday when me bought the baking pan and the ingredient..DH is asking nak buat cake ape?..so me replied..chiffon cake..and he is laughing..hahaha sebab dia kata bersepah2 chiffon cake kat tesco, carrefour..buat apa lah me susah2 nak buat..aihhhhh..dia tak rasa lagi my chiffon cake ok..hhihihi and after me removed the cake from the baking pan..I asked him..sama tak kek tesco???..memang tak la kan..*wink*..haa baru tau..the cake is simply gebu, padat dan lembut..uummphhh.

Masak Dari Hati Masak Dengan Iman


Salam suka-suka hati from me :-)

Suka suka hati and masak dari hati masak dengan Iman is trademark from chef ammar in his cooking show - Hidangan Barakah which is aired at TvAlhijrah during the month of Ramadhan.  I found that his cooking show is different from other cooking show that I usually watched.  He introduced cooking in more Islamic way as he stressed on sunnah and dzikir.  I agree with him that we must cook from our heart - I mean a happy heart will a give a good result, if I am not happy or stressed, I will not baking as the cake not turn out as expected even though baking is my monthly routine :-)


Chef Ammar briefed us about the recipe, selection of olive oil, how to cut the vegetable for the salad, sunnah food, kitchen time management.  He shares may tips in cooking :-) To chef, the rules is, prepare the food that takes longer time to cook first and shorter time to cook is the last.


Our first recipe is to prepare the mandy lamb dish.  He taught us how to clean and marinate the lamb.  He advise us to choose a lamb shoulder as Our prophet likes to eat lamb shoulder.  Skimming is also very inportant to make the food last more than a day. And, don't forget - dzikir :-)

Next, we prepare the brasmathi rice with saffron.  He demonstrate to us how to clean and cooked the rice in proper way.  During the cooking process, the aroma that came from the cooker, makes everyone nearby feels hungry and it is masyallah..tasty.


Our third menu for the day is to prepare Baklavah.  I love it as it is not too sweet.  Chef had adjust the sugar volume in the syrup so that it is not too sweet.


Humus is the bonus recipe.  Easy to prepare, chickpeas, tahini, lemon salt blend together and decorate it with olive oil, chickpeas and paprika powder..yumm!..



Suka-suka hati after the cooking session..I personally feels the the cooking lesson is value for money and the place is also very nice and quiet.  I enjoy the class very much where I got a chance not only learning a new recipe but also making a new friend that have the same passion and hobby.
